Berry Chocolate Tart with Nut Crust


Berry Chocolate Tart with Nut Crust:

-2 cups of mixed nuts- we used almonds and walnuts

-1/3 cup of coconut oil/butter

-1/2 cup of rice flour

-2 T of Wedderspoon Organic Wild Rata Honey

Chocolate Ganache Filling:

-1/2 cup of Wedderspoon Organic Wile Rata Honey

-1/2 cup of unsweetened cocoa powder

-1 teaspoon grated orange peel

-2 teaspoons warm water or more


-1 pint of berries

Place nuts in food processor and process until finely ground. Add butter, rice flour, and honey; process until dough forms a ball. Chill 1 hour. Spray 9 inch tart pan (with removable bottom) generously with nonstick cooking spray. Press dough into bottom and up sides of tart pan. Bake 350 degrees for 12 to 15 minutes, until shell is golden brown. Remove from oven and cool.

In a small bowl, whisk together honey, cocoa powder, orange peel and 2 teaspoons of warm water, or more until you reach desired consistency. To assemble tart, spread chocolate filling into cooled tart shell. Arrange berries to cover. Refrigerate until ready to serve. Enjoy without guilt! Makes 8 servings.
