Kale Salad with Cranberries and Pistachios
Try this delicious kale salad that includes kale, pistachios, and cranberries, which are all superfoods. Superfoods are high in vitamins, minerals, antioxidants, and phytonutrients. In addition, Kale has cancer fighting enzymes and calcium (more than milk!). Pistachios are full of healthy fat and can help lower LDL or “bad” and cholesterol. All of these ingredients mixed together with a touch of Wedderspoon’s raw, organic, mildly sweet rata honey in the dressing, making this a superfood salad full of vitamins and nutrients!
10 cups of loosely packed Kale stemmed and chopped.
1 large Carrot grated
1/2 cup dried Cranberries
1/2 cup Pistachios chopped.
1/4 cup of Olive Oil
2 tsp Wedderspoon Raw Honey
2 tsp good balsamic vinegar
1 tsp of Dijon Mustard.
Salt and Pepper to taste
In large bowl whisk together oil, vinegar, mustard and honey until smooth.
Add carrots and kale, mix well and let sit for 1/2 hour (longer if possible), sprinkle with the nuts, season with salt and pepper and toss again.
